Buying Sayer dates online is a bit more of a gamble than buying a firmer variety, simply because you can't check moisture or colour by hand before the box arrives. Here's what actually matters when you're choosing between listings.

First, know what you're getting. Sayer is an Iranian variety grown mainly in Khuzestan, soft-textured and very sweet — closer to molasses in flavour than the cleaner caramel notes of Medjool. It's not the date to order if you want something firm and dry for a gift box; it's the date to order if you're after something soft for snacking, baking, or making your own date paste and syrup at home.

Listing photos can be misleading, so read the description closely. Look for terms like "moisture content," "grade," or "harvest date" — a seller who states these clearly is more likely to be shipping fresh, well-handled stock. Vague listings that only say "premium" or "organic" without any grading detail are worth being cautious about.

Iranian Sayer dates ship better in smaller, well-sealed packaging than in large loose boxes, since the fruit is soft and can compress under its own weight. If a listing photo shows dates packed loosely in a big box rather than in trays or smaller sealed bags, expect some crushing on arrival — it won't affect the taste much if you're using it for paste, but it matters if you wanted whole, presentable pieces.

On arrival, refrigerate immediately in an airtight container. Sayer doesn't hold up as well at room temperature over multiple weeks as a drier date would, so treat it more like a perishable ingredient than a shelf-stable snack.
