Kurma Mariami AA: Incorporating Dates into Cuisine Beyond Sweet Treats

Beyond the fruit bowl: cooking with dates

Kurma Mariami AA comes from Iran, a soft grade with a caramel taste and a skin that wrinkles slightly when it's ripe — the same texture that makes it good for eating out of hand also makes it melt into a sauce or a stuffing without turning gluey. Most people only reach for it at dessert time. Cooks who work with dates regularly know it does more work in a savoury pan than in a cake tin.

Stuffed dates, done properly

Slit the date lengthwise, take out the seed, and pack the cavity with something sharp or salty: goat cheese, a toasted almond, a strip of beef bacon. The AA grade holds its shape through a short bake at 180°C for about eight minutes — thinner grades collapse. Serve them warm, straight off the tray.

Tagine and slow-cooked meat

Drop three or four whole dates into a lamb or chicken tagine in the last thirty minutes of cooking. They break down slightly and thicken the sauce, and the sugars caramelise against the meat instead of sitting on top of it the way a spoon of honey would. Cumin and cinnamon carry the flavour better than sweeter spices here.

Salsa, chutney and a quick glaze

Chopped dates blended with tomato, red onion, lime juice and a chilli make a chutney that holds up next to grilled chicken or lamb chops. For a glaze, blitz pitted dates with a splash of vinegar and a little water until it's spreadable, then brush it onto meat for the last few minutes on the grill so it caramelises instead of burning.

Salads and rice

Quartered dates go well with rocket, feta and toasted walnuts — the fat from the cheese and nuts balances the sweetness. Stirred through a rice pilaf with toasted almonds, they do the same job a handful of raisins would, but with a firmer bite and a deeper flavour.

Buying and storing for the kitchen

For cooking, buy Mariami AA loose or in a 500g pack rather than a gift box — you'll go through it faster than you think once you start using it in savoury dishes. Kept in the fridge in a sealed container it stays workable for months; at room temperature the sugars start crystallising on the surface within a few weeks. Dates on the stalk are worth trying too if you want a fresher, less concentrated sweetness for salads.

If you've mostly bought dates for Ramadan or as gifts, this is the grade to keep a bag of in the kitchen year-round.
